Nihon Izumi Brewery brews their sake in their basement where temperature can be controlled throughout the year, which allows the production of premium sake year round. <br><br> Ground-water of Nagara-river drawn from 100M of under-ground is used for this sake. The main fermentation mash is squeezed using the traditional method of Kifune, which takes three days to complete. <br><br> This sake is brewed from Yamada-Nishiki (King of sake-brewing rice) and ground-water of the Nagara River. It is characterized by a rich & smooth taste and aromatic flavors like apples or bananas.
